Our extra virgin olive oil is produced in Cuenca, exclusively for Macellum. Just one geographical zone, with no mixings and the perfect climate conditions. While the rest of companies are mixing oils from different producers from Spain or from many countries, Macellum is bottled by just one vendor. Our variety of olives is called Arbequina, which is picked and pressed in less than 24 hours. This way we guarantee the highest quality possible.

Furthermore, the volume is high and continuous during the entire year; there are no problems to provide high quantities all the time. We monitor the whole production process, from the harvest to the canning and bottling. The whole process is totally traceable.

Extra virgin olive oil has a superior quality as the extraction of the olives is done using natural methods. This variety of olive oil contains no more than 0.8% acidity, which gives the oil a fruitiness superior taste. It’s golden color from the highest quality mature olives gives this oil a vibrant taste that will potentiate the taste of your food while improving your health.

Extra virgin olive oil is known for its healthy properties such as reduction of risk factors of coronary heart disease, the prevention of cancers, and alterations of immune and inflammatory responses. About 75 percent of the fat from extra virgin olive oil is monounsaturated, which is a type of oleic acid that has been demostrated to decrease total blood cholesterol. The closest oil to this levels of monounsaturated fat is canola oil with only around 60%.
